Yield: 6
- - 1 cup full-fat milk
- - 3/4 cup flour
- - 1 whole large egg
- - 1 tbsp olive oil plus extra for brushing the pan
- - 1/2 tsp baking powder
- - 1 1/2 tbsp powdered white sugar
- - 1 1/2 tsp vanilla extract
- - Peanut butter to serve
Prepare the Batter:
- Break the egg into a separate bowl carefully to avoid any pieces of eggshell.
- In a large mixing bowl, pour the milk and add the flour on top. Add the egg over the flour.
- Add the olive oil, baking powder, powdered sugar, and vanilla extract to the bowl.
- Gradually whisk all the ingredients together until the mixture is smooth and no lumps remain.
Cook the Crepes:
- Heat a non-stick pan over medium heat and lightly brush it with olive oil.
- Pour a ladleful of the crepe batter into the center of the pan. Rotate the pan to spread the batter into a thin, even layer.
- Cook the crepe on low flame for about 2 minutes or until the bottom is set and lightly golden.
- Use a spatula to lift the edges of the crepe, then carefully flip it using your hands or the spatula. Cook for another 2 minutes until the other side is also cooked and lightly golden.
- Transfer the cooked crepe to a plate and repeat the process with the remaining batter.
