  • - 1 egg
  • - 2 cups shredded mozzarella cheese

Instructions

Preheat Oven:

  • - Preheat your oven to 375°F (190°C).

Prepare the Shrimp Scampi:

  • - In a large skillet, melt the butter over medium heat.
  • - Add the minced garlic and cook for 1 minute until fragrant.
  • - Add the shrimp and cook until they turn pink, about 2-3 minutes per side.
  • - Pour in the white wine (or chicken broth) and lemon juice, cooking for an additional 2 minutes.
  • - Stir in the chopped parsley and season with salt and pepper. Remove from heat and set aside.

Prepare the White Sauce:

  • - In a medium saucepan, melt the butter over medium heat.
  • - Stir in the flour and cook for 1-2 minutes until lightly browned.
  • - Gradually whisk in the milk, stirring constantly to avoid lumps.
  • - Bring to a gentle simmer and cook until the sauce thickens, about 5-7 minutes.
  • - Stir in the grated Parmesan cheese and ground nutmeg. Season with salt and pepper.

Prepare the Ricotta Mixture:

  • - In a bowl, combine the ricotta cheese and egg, mixing until smooth.

Assemble the Lasagna:

  • - Spread a thin layer of the white sauce on the bottom of a 9x13-inch baking dish.
  • - Place a layer of cooked lasagna noodles over the sauce.
  • - Spread 1/3 of the ricotta mixture over the noodles, followed by 1/3 of the shrimp scampi mixture and 1/4 of the white sauce.
  • - Repeat the layers twice more, ending with a final layer of noodles and the remaining white sauce on top.
  • - Sprinkle the shredded mozzarella cheese evenly over the top.

Bake:

  • - Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • - Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

Serve:

  • - Let the lasagna rest for 10 minutes before serving. Garnish with fresh parsley.
