Materials

  • - 1½ pounds boneless skinless chicken breasts
  • - 2 teaspoons Italian seasoning
  • - Salt and pepper to taste
  • - 1 tablespoon olive oil
  • - 2 tablespoons butter
  • - 1 small onion diced
  • - 5 cloves garlic minced
  • - 1 cup heavy cream
  • - ½ cup chicken broth
  • - ½ cup grated Parmesan cheese
  • - 1 cup spinach chopped
  • - ½ cup sun-dried tomatoes chopped

Instructions

  • Season the chicken breasts with Italian seasoning, salt, and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown on both sides and cooked through. Remove chicken and set aside.
  • In the same skillet, melt butter. Add onion and sauté until soft. Add minced garlic and sauté for 1 minute until fragrant.
  • Stir in heavy cream, chicken broth, and grated Parmesan cheese. Bring to a simmer and let sauce thicken slightly.
  • Add chopped spinach and sun-dried tomatoes to the sauce and simmer until spinach wilts.
  • Return the chicken to the skillet and spoon the sauce over the chicken. Cook for another 2-3 minutes to reheat the chicken.
  • Serve immediately.
