- 1 cup spinach packed, roughly chopped or torn
- 1 –ounce soft goat cheese crumbled
- 2 eggs
- 2 tablespoons heavy cream
- Salt
- Black pepper
Preheat the oven to 400°F and butter or cooking spray a 6 to 8-ounce ramekin.
Fill the ramekin halfway with chopped spinach, then top with crumbled goat cheese, spreading it out evenly.
Crack the eggs on top of the spinach, then drizzle with heavy cream and season with salt and pepper.
Bake the ramekin for 10-14 minutes, or until the whites are set but the yolks are still runny, or until the eggs are cooked to your preference.
When the eggs are done, take them from the oven and serve with a slice of crusty bread.
