Dry ingredients:
- 1/2 cup oat flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
Wet ingredients:
- 3 medium extra-ripe mashed bananas 1 1/2 cups mashed well
- 2 large eggs
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 3/4 cup sugar-free semi-sweet chocolate chips divided (Such as Lily’s) or chocolate chips of choice
Preheat oven to 350F. Grease a 9x4 loaf pan. To make removal easier, lay a 9 × 9-inch piece of parchment paper inside the pan.
In a medium bowl, combine the dry ingredients (oat flour, cocoa powder, baking powder, baking soda, and salt).
In a large mixing basin, mash the bananas until well combined and liquidy, then add the eggs, maple syrup, and vanilla.
Stir the dry ingredients into the wet mixture until well blended. Stir in 1/2 cup of chocolate chips.
Pour into the prepared loaf pan, sprinkle with the remaining chocolate chips, and bake for 45 to 55 minutes, or until a toothpick inserted comes out clean.
Remove from the loaf pan and let it cool 15 minutes before cutting.
