- 2 1/2 cups cooked quinoa
- 3 cups broccoli chopped
- 3 eggs whisked
- 1 1/2 cup cheddar cheese shredded
- 1/3 cup Parmesan cheese shredded or Romano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon onion powder
Grease an 8 x 8 baking pan and preheat the oven to 350 degrees.
To a big bowl, add the quinoa, broccoli, cheddar, romano, onion powder, and salt. Blend well.
Toss everything in the basin with the whisked egg, making sure everything is completely covered.
Smooth with a spatula after adding the mixture to the pan.
Bake until the edges start to brown, about 40 to 45 minutes. Take out of the oven, let cool fully, then cut into squares and enjoy!
For 4-5 days, store in the refrigerator in an airtight container.
