Materials

  • 2 1/2 cups cooked quinoa
  • 3 cups broccoli chopped
  • 3 eggs whisked
  • 1 1/2 cup cheddar cheese shredded
  • 1/3 cup Parmesan cheese shredded or Romano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon onion powder

Instructions

  • Grease an 8 x 8 baking pan and preheat the oven to 350 degrees.
  • To a big bowl, add the quinoa, broccoli, cheddar, romano, onion powder, and salt. Blend well.
  • Toss everything in the basin with the whisked egg, making sure everything is completely covered.
  • Smooth with a spatula after adding the mixture to the pan.
  • Bake until the edges start to brown, about 40 to 45 minutes. Take out of the oven, let cool fully, then cut into squares and enjoy!
  • For 4-5 days, store in the refrigerator in an airtight container.
