Ingredients:
– 1 pound smoked beef brisket, thinly sliced
– 2 cups cheddar cheese, grated
– 2 cups mozzarella cheese, grated
– 1/2 cup caramelized onions
– 4 tablespoons unsalted butter
– 1 tablespoon barbecue sauce (optional)
– Salt and pepper to taste
Directions:
Preheat a skillet or griddle over medium heat.
Butter one side of each slice of bread. On the unbuttered side, layer a quarter of the cheddar and mozzarella cheeses, followed by the smoked brisket, a sprinkle of caramelized onions, and a drizzle of barbecue sauce if using. Season with salt and pepper. Top with another layer of cheddar and mozzarella cheese and finally another slice of bread, buttered side up.
Place the sandwich in the skillet and cook until the bread is golden brown and the cheese has melted, about 3-4 minutes per side.
Repeat with the remaining sandwiches.
