Paprikash is a typical Hungarian dinner cooked with pork shoulder and plenty of full-fat sour cream. It’s named “paprikash” because it makes extensive use of the paprika spice, which is popular in many Hungarian recipes. The beef is cooked in a rich sauce for a long period, until it virtually breaks apart (which makes it ideal for slow cooking).

Because this is Slender Kitchen and we prefer healthier meals, I lightened this recipe by substituting out the pork shoulder for a much thinner pork tenderloin cut, as well as a lower-fat sour cream. The rest remains the same.

If you want to make chicken paprikash, this recipe works equally well with chicken breasts or thighs.

First, season the pork with salt and pepper. Second, place the pork in the slow cooker and cover with the vegetables and herbs. Third, create a sauce with paprika, caraway, Worcestershire sauce, red wine vinegar, chicken stock, and tomato paste; pour over the pork. Fourth, simmer for 8 hours on low heat, then shred and combine with the sour cream.

Ingredients
  

  • 2.5 lbs lean pork tenderloin
  • 1 cup onion diced
  • 4 garlic cloves minced
  • 1 red pepper diced
  • 1 tbsp paprika
  • 1/4 tsp ground caraway
  • 1 tbsp Worcestershire sauce
  • 1 tbsp red wine vinegar
  • 1/4 cup low sodium chicken broth

  • 1/2 cup light sour cream

Instructions
 

  • Season the pork with salt and pepper.
  • Combine pork, onions, peppers, garlic, and thyme in the slow cooker.
  • Mix in the paprika, caraway, Worcestershire sauce, red wine vinegar, chicken stock, and tomato paste. Pour over the meat.
  • Cook on low for eight hours. When ready to serve, shred the pork with two forks and add the sour cream.
