I used flounder for this recipe, but any white flaky fish fillet will work! When we go fishing in the summer and catch black striped bass, this is my go-to! Fish Soup is one of my most popular fish dishes!

I aim to eat fish at least twice a week, and to keep things interesting, I prefer to prepare it in a variety of ways. This dish is ideal for a quick weekday supper, and you can substitute any white fish, such as sole or cod. Serve over crusty bread, brown rice, or quinoa to soak up the flavorful sauce.

Variations and Tips

  • Any firm, white boneless fillet would be ideal; I prefer local and ask my fishmonger for the freshest alternatives available. I used flounder cod in this recipe, but halibut or striped bass would also work well.
  • When fresh fish is available, buy it the day or day before you want to prepare it.
  • If fresh is not available, purchase frozen rather than previously frozen to maintain freshness and keep it frozen until needed.
  • Frozen fish fillets are ideal to keep on hand in the freezer. You may defrost them overnight in the fridge or take them out of the freezer and place them in an ice bath (in the packaging if they are individually wrapped or in a sealed Ziploc) for approximately 30 minutes.
  • If you don’t like fish, try scallops or shrimp instead.

  • 1 tsp olive oil
  • 4 6 ounce pieces white fish fillets (flounder, fluke, tilapia)
  • 3/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 3/4 cup diced green bell pepper
  • 2 1/2 cups tomatoes, chopped
  • 1 tbsp Cajun spice seasoning

How To Make Skillet Cajun Spiced Fish

  • Cook the onion and garlic in olive oil over medium heat for a few minutes, or until softened.
  • Stir in the tomatoes, peppers, and spices, and simmer until the tomatoes are tender, about 2-3 minutes.
  • Place the fish fillets in the sauce, cover, and simmer on medium-low for about 12-15 minutes, or until easily flaked.
  • To serve, lay the fish on a platter and ladle sauce on top. Serve immediately.
