Mashed Cauliflower
This simple mashed cauliflower dish uses only five ingredients: cauliflower, garlic cloves, buttermilk, and butter. Will it taste like mashed potatoes? Pretty close! Of course, it’s cauliflower, so keep that in mind. If you like a more potato-like texture, use half mashed potatoes and half cauliflower, similar to this Baked Potato Soup recipe.
Ingredients
- 1 medium head cauliflower, cut up into florets
- 4 cloves crushed garlic
- 1/3 cup 1% buttermilk
- salt and pepper to taste
- 1 tbsp salted butter, plus optional more for serving
How To Make Mashed Cauliflower
If you can boil water, you can prepare this simple meal! Simply cook or steam the cauliflower in water or stock until soft. Then combine it with fluids in an immersion blender until smooth. This is the immersion blender (affil link) that I use. If you don’t have an immersion blender, you may use a conventional blender; just make sure not to overprocess it and convert it into soup.
Tips and Variations
I prefer buttermilk since it’s creamy and low in fat. If you don’t have buttermilk, mild sour cream works well. Adding a little of butter gives it a velvety mashed potato taste.
