How to make hearty beef stew
- Chunk the carrots and onions.
- Toss the stew beef with flour in a medium bowl, then set it aside.
- Heat a Dutch oven (I prefer a 7-quart) or a heavy-bottomed pot to medium-high heat and brown the meat.
- Introduce the remaining oil, carrots, and onions, then cook for 3-4 minutes. Stir in the garlic and tomato paste, cooking for an additional 1-2 minutes.
- Pour in the beef broth, wine, and the remaining ingredients, then simmer.

- 2 lbs beef stew meat
- 1/2 cup flour
- 3 tablespoons vegetable oil
- 2 teaspoon salt
- 1 teaspoon fresh black pepper
- 4 carrots chopped
- 1 medium onion chopped
- 5 cloves garlic minced
- 3 tablespoons tomato paste
- 5 cups beef broth
- 1/2 cup red wine
- 3 tablespoons worcestershire sauce
- 4-5 yukon potatoes
- 2 teaspoon fresh rosemary
- 2 teaspoons fresh thyme
- 1 -1/2 cup frozen peas
- 3 tablespoons fresh chopped parsley
INSTRUCTIONS
Toss beef stew meat with flour in a medium bowl and set it aside.
Heat a Dutch oven or heavy-bottomed pot over medium-high heat. Add half of the vegetable oil and half of the meat, along with half of the salt and pepper. Brown for 3-4 minutes, turning the meat halfway through. Remove the meat and repeat with the remaining meat.
Add the remaining oil, carrots, and onions, and cook for 3-4 minutes. Then, add the garlic and tomato paste.
Return the browned beef to the pot and pour in the beef stock, wine, Worcestershire sauce, thyme, and rosemary. Stir and bring to a low boil over high heat. Reduce the heat, cover, and simmer for 1 hour.
Add the potatoes, cover, and simmer for about 45 minutes or until the potatoes are tender.
Finally, add the frozen peas and heat through for 5 minutes. Garnish with freshly chopped parsley and serve!
