Just made this Crispy Salmon with Garlic Herb Roasted Potatoes. Ideal for a hearty and pleasant supper!
Ingredients:
– 4 salmon fillets (about 6 ounces each)
– 2 pounds small potatoes, quartered
– 3 tablespoons olive oil, divided
– 4 cloves garlic, minced
– 1 teaspoon dried rosemary
– 1 teaspoon dried thyme
– Salt and pepper to taste
– 2 tablespoons fresh parsley, chopped for garnish
– Lemon wedges, for serving
Directions:
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, toss the potatoes with 2 tablespoons olive oil, garlic, rosemary, thyme, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until crispy and golden.
3. While the potatoes are roasting, season the salmon fillets with salt and pepper.
4. Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin-side down, and cook for 5-6 minutes until the skin is crispy. Flip the fillets and cook for another 4-5 minutes, or until desired doneness.
5. Serve the salmon with the roasted potatoes, garnished with fresh parsley and lemon wedges on the side.
