Freezer Breakfast Burritos
Breakfast burritos may also be a delicious and quick supper. With a side of refried beans and cilantro-lime rice, you’ve got yourself a southern-style breakfast for supper. Frozen burritos are quick and easy to prepare. Your entire dinner in a portable box, ready to heat and eat.
I’m pleased to share another dish that I developed in collaboration with Reynolds. I’ve been concentrating on freezer dinners to make weekdays and nights a little simpler! Rather than devoting a whole day to meal prep, I find that double a dish I intend to make for my family and freezing the other half works best for me. I like doing it this way since it doesn’t take me much additional time to double a recipe. These breakfast burritos are ideal for a “there’s nothing in my fridge” breakfast, lunch, or quick dinner.
I used Reynolds Wrap Heavy-Duty Aluminum Foil for the freezer burritos, which not only shields food from direct heat but also helps avoid freezer burn when wrapping meals for freezer storage. I tried numerous methods to heat them up, including baking them from frozen, which takes the longest but produces the best results. Thawing them overnight in the refrigerator before baking saves time and produces excellent results. Microwaving from frozen is my least favorite approach, but it works when time is of the essence. In each case, I find that toasting them at the end, either by broiling or placing them on a hot pan, enhances the taste of the tortilla significantly.
How to freeze burritos for meal prep:
- set the aluminum foil vertically on a work surface, set the rolled burrito in the center bottom third, roll partly, then fold the sides over the tortilla to the center, and roll tight.
- Transfer to a freezer bag to avoid freezer burn (the bags may be reused).
- Label it with the name and date using a sharpie. I find it useful to record the cook time and temperature for reheating.
How to heat frozen burritos:
- To reheat, thaw in the refrigerator overnight (best results and wonderful if you remember): The night before, place the tortilla in the refrigerator. Bake in a preheated oven at 425F for 20 minutes, flipping halfway. Unwrap the foil and bake for 5 minutes, uncovered. Optionally, broil for 2 to 3 minutes at the end to toast.
- To reheat directly from the freezer to the oven: (Better results if you don’t defrost the burritos beforehand, but it takes longer): Bake for 45 minutes at 425°F, flipping halfway. Unwrap the foil and bake for 5 minutes, uncovered. Optionally, broil for 2 to 3 minutes at the end to toast. Allow to stand for 2 minutes before serving.
- To reheat directly from the freezer to the microwave (the least preferred method, but the quickest) Place the burrito on a microwave-safe plate, cover with a paper towel, and microwave for 1 minute. Cook for another 1 to 1 1/2 minutes after turning. Allow to stand for 2 minutes before serving. (Optional: toast in a pan for 2 minutes on each side, or broil for 2 to 3 minutes.
Dietary Modifications
- By omitting the bacon, you may make them vegetarian.
- Alternatively, use sausage or ham for the bacon.
- To make them dairy-free, leave off the cheese.

Freezer Breakfast Burritos
Ingredients
- 6 strips center cut bacon
- 10 large eggs beaten
- 4 scallions chopped
- 1/2 red bell pepper diced
- 1/2 teaspoon salt
- 12 tablespoons shredded cheddar or pepper jack cheese
- 6 8- inch low carb flour tortillas I used Ole Xtreme Wellness
- 6 pieces heavy duty foil cut 10 x 12 inches each
- hot sauce for serving optional
Instructions
- Cook the tortillas on all sides on a hot griddle or over an open flame. If not eating immediately soon, keep warm in the oven. This, in my opinion, makes the tortillas more malleable and improves the flavor.
- Melt butter in a large nonstick pan over medium heat. Cook until the bacon is cooked through, about 4 to 5 minutes. Transfer with a slotted spoon to a paper towel-lined plate to drain.
- In a large mixing basin, combine the eggs and salt. Combine the scallions and bell pepper.
- Remove 1 teaspoon of the bacon fat before adding the eggs, allowing them to set on the bottom before stirring a few times to fry thoroughly. Set aside.
- Divide a generous 1/2 cup of the egg mixture over the bottom third of the tortilla on a clean work surface. Add a piece of bacon and 2 tablespoons of cheese to each. Roll from the bottom in a tight cylinder, folding the left and right corners in toward the center. Repeat with the remaining tortillas and filling, seam-side down.
- If you’re going to eat straight away, heat a pan over medium heat. When the pan is heated, brush it with oil and add the burritos, seam side down. Cook, covered, for approximately 2 minutes per side, or until the bottoms of the burritos are golden brown. If desired, top with spicy sauce or salsa.

- To reheat in an air fryer, defrost in the refrigerator overnight: (Excellent outcomes)
- The night before, place the tortilla in the refrigerator. Unwrap and remove foil, spray with a little oil, and air fried for 8 to 9 minutes in a preheated air fryer 400F, flipping halfway until cooked through in the middle.
