Ingredients
  

  • 2 whole heads of garlic
  • olive oil for drizzling
  • 6 tablespoons unsalted butter
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon chopped fresh herbs like parsley, basil, rosemary
  • kosher salt
  • 4 slices sourdough bread
  • 6 ounces fontina cheese freshly grated

Instructions
 

  • Set the oven’s temperature to 350°F.
  • Slice off the top of the garlic head to expose the cloves before roasting. To remove the paper on the sides and peel off any extra, gently wipe back and forth. Apply a small amount of olive oil to every bulb. Place the bulbs in the oven after securely wrapping them in foil. Roast the cloves for 45 to 60 minutes, or until they are brown and caramelized. Allow to cool a bit.
  • Squeeze the cloves out onto a dish after the garlic has cooled enough to touch. Add the fresh herbs, parmesan, melted butter, and a small amount of salt. Mash everything together with a fork until well blended.
  • Apply the garlic butter on the bread’s outside. A big griddle or skillet should be heated over medium-low heat. Put two bread pieces in the skillet, butter side down, and then cover with cheese. Place the remaining bread pieces, butter side up, on top.
  • Cook, stirring occasionally, over low to medium-low heat until the cheese melts. When the bottom is toasted and golden, turn it over and continue cooking until the other side is also golden.
