Beef Chow Fun Noodles (Pan-Fried Ho Fun)!!

Beef Chow Fun, also called Beef Ho Fun, is a simple Chinese noodle meal created by stir-frying tender beef with fresh rice noodles (Ho Fun). It’s a very popular stir fried noodle dish that can be found at almost any Chinese restaurant.

The wok gives the beef a beautiful sear, which contrasts with the chewy texture of the fresh rice noodles, and the dish is smothered in a fantastic sauce and garnished with crunchy bean sprouts. The greatest thing is that it’s simple to cook at home and takes less than 30 minutes!

Ingredients:

* 8 oz fresh wide rice noodles (Ho Fun)

* 8 oz flank steak or sirloin steak, thinly sliced against the grain

* 1 cup bean sprouts

* 2 stalks scallions, cut into 2-inch pieces

* 3 cloves garlic, minced

* 2 tbsp vegetable oil

* 2 tbsp soy sauce

* 1 tbsp oyster sauce

* 1 tsp dark soy sauce (optional, for color)

* 1/2 tsp sugar

* Salt and pepper to taste

* Sesame oil for drizzling (optional)

Instructions:

1. Prep Ingredients:

* Rinse the fresh rice noodles under cold water to separate them and remove excess starch.

* Thinly slice the flank steak against the grain.

* Mince the garlic, cut the scallions, and rinse the bean sprouts.

2. Marinate the Beef:

* In a bowl, mix the sliced beef with 1 tablespoon of soy sauce, 1 teaspoon of vegetable oil, and a pinch of salt. Set aside to marinate for about 15 minutes.

3. Cook the Noodles:

Preheat a large nonstick pan or wok to medium-high heat. Pour in 1 teaspoon of vegetable oil and stir to coat the pan.

Place the new rice noodles in the pan, spreading them out into a single layer. Allow them to simmer without stirring for approximately 2-3 minutes, or until the bottom begins to brown slightly.

Flip the noodles over and heat for a further 2-3 minutes, or until lightly browned and crispy. Place the noodles on a platter and set aside.

4. Cook the Beef and Vegetables:

* In the same pan, heat the remaining vegetable oil over medium-high heat. Add the minced garlic and stir-fry until fragrant.

* Add the marinated beef slices to the pan in a single layer. Let them sear for about 1-2 minutes without stirring to develop a nice crust.

* Stir-fry the beef until it’s almost cooked through, then add the bean sprouts and scallions. Stir-fry everything together for another 1-2 minutes.

5. Combine Everything:

* Return the cooked noodles to the pan with the beef and vegetables.

* Add the remaining soy sauce, oyster sauce, dark soy sauce (if using), sugar, and a pinch of pepper. Toss everything together until well combined and heated through.

6. Finish and Serve:

* Drizzle with a few drops of sesame oil for extra flavor (optional).

* Transfer the Beef Chow Fun Noodles to a serving plate or bowl.
