This Cheesy Potato & Smoked Sausage Casserole is a simple meat and potato supper that everyone can agree on. It’s designed to be enjoyed and shared.
Ingredients:
1 lb smoked sausage, sliced
4 cups potatoes, diced
1 onion, chopped
2 cups cheddar cheese, shredded
1 cup milk
1/2 cup sour cream
1/4 cup butter, melted
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons fresh parsley, chopped for garnish
Directions:
Preheat the oven to 375° Fahrenheit (190° Celsius).
In a large pan over medium heat, brown the sausage and sauté the onion until transparent.
In a large mixing bowl, combine the cooked sausage and onion with the diced potatoes, 1 cup of cheddar cheese, milk, sour cream, melted butter, paprika, salt, and pepper.
Transfer the mixture to a greased baking dish. Sprinkle the remaining cheddar cheese on top.
Bake for 60 minutes, or until the potatoes are soft and the topping is golden and bubbling.
Garnish with chopped parsley before serving.
